120 g cake flour
salt
lemon pepper
cayenne pepper
420 g Ocean King Portuguese Sardines , drained
oil for deep-frying
Season the flour to taste with salt, lemon pepper and cayenne pepper and mix well. Place in a plastic bag. Carefully place the whole sardines in the bag and shake gently until each sardine is completely coated with seasoned flour. Heat the oil and deep-fry a few sardines at a time. Drain on kitchen towelling. Place the hot sardines in a deep dish and serve with your favourite dip. (Mayonnaise with chopped green pepper, capers, fennel and salt and pepper goes well with the sardines).
