Ingredients
6 tbsp flour
3 tbsp olive oil
3 tbsp butter
½ cup chopped celery
1 bunch spring onions, chopped
4 tbsp chopped red pepper
½ cup chopped onion
1 clove garlic, crushed
2 tbsp fresh chopped parsley
1½ tsp salt
½ tsp ground black pepper
½ tsp ground cayenne pepper, or to taste
6 tins Ocean King smoked oysters
800g short crust pastry
Method
Heat oven to 200°C.
Roll out the pastry and cut out 12 8cm circles.
Shape the pasty into cups by lining into muffin tins.
Partially bake the pastry (for approximately 10 minutes).
In a large heavy saucepan make combine flour, oil, and butter; cook over medium heat, stirring until golden brown.
Add celery, spring onions, red pepper, onion, garlic, and parsley. Sauté until vegetables are tender. Add salt, pepper and reserved oyster liquid.
Cook slowly until very thick.
Add oyster to mixture and simmer 5 minutes.
Let cool before filling partially baked pastry cups.
Bake in a preheated 200° oven for 20 minutes or until pasty is golden brown.
Serve hot.
Makes 1 dozen or more individual pies.
