Ingredients
15 Cherry tomatoes, cut in half
1 tsp ground black pepper
1 tbsp Rosemary leaves, chopped
½ tbsp Olive oil
170g (2 tins) Ocean King smoked oysters, drained
¼ cup Sunflower oil
10 Streaky bacon strips
30 Round wooden toothpicks
3 tbsp Garlic, crushed
Method
Heat oven to 180ºC.
Place tomatoes in a roasting tin. Cover the tomatoes with black pepper, rosemary and olive oil. Toss to coat.
Roast tomatoes for 15 minutes.
Cut bacon strips in thirds.
Wrap a bacon slice around each oyster and place a toothpick through to hold it in place.
In a pot, heat oil, and add garlic.
Cook wrapped oysters in oil until bacon is crisp. Remove from pan and drain on a paper towel.
Skewer a tomato onto the bottom of the toothpicks.
Serve hot.
