10 ml curry powder
500 ml cream
315 g Ocean King smoked mussels
20 ml lemon juice
salt and milled pepper to taste
4 rounds hot, buttered toast
MARINATED TOMATOES
500 g cherry tomatoes
2 cloves garlic, chopped
10 ml chopped parsley
6 basil leaves, chopped
30 ml balsamic vinegar
60 ml olive oil
MARINATED TOMATOES: Plunge tomatoes into boiling water for a few seconds. Cool slightly, then peel skin off carefully, keeping tomatoes whole. Place in a bowl and pour remaining ingredients over. Marinate until ready to serve. MUSSELS: Stir curry powder into cream. Simmer over low heat, uncovered, until cream is reduced by half. Drain mussels and stir into cream, stirring lightly for 1 to 2 minutes, or until warmed through. Add lemon juice. Season. Serve on toast with marinated tomatoes.
