15 ml sunflower oil
2 leeks
2 large egg yolks
250 ml cream
20 ml snipped chives
15 ml lemon juice
10 ml lemon rind
1 can/s g Ocean King smoked mussels
Preperation Time: 10 minutes
Heat oil in a saucepan and fry leeks for one minute.
Whisk together egg yolks and cream and add to the pan. Stir over gentle heat for five minutes or until thickened.
Stir in chives, lemon juice and lemon rind and season to taste. Stir in mussels.
Serve with cooked and drained tagliattelle pasta.
Cooking Time: 8 minutes
