30 ml butter
1 green pepper, diced
1 onion, finely chopped
1 tomato, skinned and finely chopped
3 extra-large eggs, whisked
375 ml milk
30 ml cake flour
250 ml Cheddar cheese, grated
400 g prawns, drained
105 g Ocean King smoked mussels
185 g Ocean King tuna, drained and flaked
2 extra large hard-boiled eggs, sliced
10 ml fresh parsley, finely chopped
5 ml dry mustard powder
salt and freshly ground black pepper
Preheat the oven to 180 ºC (360 ºF). Spray a large ovenproof dish, about 30 x 21 cm, with nonstick spray or grease well with butter or margarine. Heat the butter in a pan until melted and fry the green pepper and onion until soft and translucent. Stir in the tomato and simmer slightly. Whisk the eggs, milk and cake flour together. Add the remaining ingredients and the tomato mixture and mix well. Turn the mixture into the prepared dish and bake for about 40 minutes or until the mixture has set. Serve with a mixed salad.
