1 short French loaf
olive oil
1 onion, finely chopped
2 cloves garlic, crushed
210 g Ocean King Portuguese Sardines , mashed
15 ml freshly chopped parsley
salt and freshly ground black pepper
150 g mozzarella cheese, sliced
Switch on the oven grill. Spray a baking sheet with non-stick spray. Arrange the French loaf, cut into 1 cm slices, on the baking sheet and grill on one side until browned. Turn over and brush the other side with olive oil. Set aside. Fry the onion and garlic in a little oil until tender. Remove from the pan and mix with the sardines and parsley. Season with salt and pepper and spoon on top of the bread slices. Top each slice of bread with a slice of cheese and grill until the cheese has melted. Serve immediately.
