Ingredients
400 g uncooked rice
12 ml oil or margarine
1 onion, chopped
1 green pepper, sliced in strips
440 g pineapple chunks
salt
pepper
thyme
lemon juice
pinch turmeric
Method
Boil the rice in salted water, drain and set aside. Heat the oil or margarine in a pan and fry the onion and green pepper until soft. Add the pineapple pieces and fry for a few minutes. Add the rice, seasonings to taste, and turmeric to enhance the colour of the mixture. Finally, add the mussels and heat through. Serve with fried fish.
