Ingredients
3 - 4 small potatoes
2 carrots, chopped
½ small onion, chopped
2 cloves garlic
1 tbsp olive oil
1 tbsp flour
1 cup dissolved or fresh chicken stock
¼ cup cream
¼ cup milk
1 cup chopped parsley
4 - 6 slices bacon, cooked crisp and chopped
85g (1 tin) Ocean King smoked oysters, drained and chopped in half
ground black pepper, to taste
Fresh ciabatta
Method
Cut unpeeled potatoes into bite-sized cubes and boil until tender.
While potatoes are boiling, sauté carrots, onion and garlic in olive oil until soft. Add flour to the mixture and cook, stirring, until flour is absorbed. Add chicken stock, cream, milk and parsley. Simmer over low heat to allow sauce to thicken. Add bacon, oysters, pepper and potatoes, stirring gently until heated through.
Dish into individual bowls and serve, piping hot, with chunks of fresh ciabatta.
