Ingredients
Salad:
10 baby potatoes, cubed
1 onion, thinly sliced
85g (1 tin) Ocean King smoked oysters, drained and cut in half
125ml sweet melon, cubed
1 red pepper, diced
lettuce leaves, to serve
Dressing: 1 clove garlic, crushed 80ml olive oil 30ml lemon juice 1 fresh chilli, chopped 5ml sugar 60ml fresh coriander, chopped
Method
Boil the potatoes until tender, drain.
Mix the dressing ingredients together
and pour over the warm potatoes. Add the onion to the potatoes and mix to coat well. Set aside until the potatoes are cool.
Add the oysters, melon and red pepper to the potato mixture. Toss gently.
Create a bed of lettuce on each of the 4 serving plates. Spoon the potato mixture on top of the lettuce and garnish with a sprig of fresh coriander.
